Preheat oven to 375°. Season pork chops with salt and pepper.
In a small bowl mix together butter, rosemary, and garlic. Set aside.
In a skillet over medium heat, heat olive oil then add pork chops. Sear one side until golden (about 4 minutes) then flip and cook 4 minutes more on the other side. Brush pork chops generously with garlic butter.
Place skillet in oven and cook until cooked through, 10-12 minutes. Serve with more garlic butter.
4 ripe avocados
Juice of 1 lime
1 tbsp.extra-virgin olive oil1 medium onion, chopped
1 lb.ground beef
1 packet taco seasoning
Freshly ground black pepper
2/3 c.shredded Mexican cheese
1/2 c.shredded lettuce
1/2 c.quartered grape tomatoes
Sour cream, for topping
Cut avocados in half and remove pits. Using a spoon, create a larger well in the avocado by digging into the center. Dice the bit of removed avocado and set aside for us to us later. Squeeze lime juice over all avocados. This will prevent them from browning.
In a medium-sized skillet over medium heat, heat oil. Add onion and cook until tender (about 5 minutes). Add your ground beef and taco seasoning, making sure to break up the meat with a wooden spoon. Season with salt and pepper, and cook until you can no longer see pink in the beef (about 6 minutes). Remove from heat and drain fat.
Fill each avocado half with beef, then top with reserved avocado, cheese, lettuce, tomato, and a dollop sour cream.
Bunless Keto Burgers
1 lb.bacon slices, halved
1 lb.ground beef
fresh ground black pepper
Juice of 1/2 lemon
3 tbsp.finely chopped chives
Butterhead lettuce, for serving
2 tomatoes, sliced
Preheat oven to 400º and place a baking rack inside of a baking sheet to catch grease.
Using 6 slices of bacon, create a bacon weave and place on baking rack. These will act as the “bun” for your burger so make as many as you want for the amount of burgers you’re going to make!
Season with pepper and bake until bacon is crispy (about 25 minutes) Transfer to a paper towel-lined plate to blot grease. Let cool for at least 10 minutes.
Meanwhile, make burgers: Preheat a grill (or grill pan) to medium-high heat. Shape ground beef into large patties and season both sides with salt and pepper. Grill until cooked to your liking, about 4 minutes per side for medium.
Make herb mayo: In a small bowl, whisk together mayonnaise, lemon juice, and chives.
Putting it all together: For each burger, place a bacon weave on the bottom then spread it with some herb mayo. Top with burger, lettuce, tomato and remaining bacon weave. Serve immediately.
