Crunchy Fresh Keto Cereal

INGREDIENTS

  • 1 package of flaked coconut
  • Ground cinnamon
  • Stevia (optional)
  • Unsweetened almond milk
  • 2 medium-sized strawberries
  • Parchment paper / coconut oil

INSTRUCTIONS

  1. Preheat oven to 350°F.
  2. Line a cookie sheet with parchment paper if you have it. If not, grease a cookie sheet with coconut oil.
  3. Pour the coconut flakes onto the cookie sheet.
  4. Cook in the oven for five minutes, watching the whole time.
  5. Shuffle the flakes around and keep cooking until they’re all a little tan and lightly toasted.
  6. Remove the flakes and sprinkle lightly with cinnamon. Use Stevia if you would like. Sprinkle to taste.
  7. Throw ½ cup of the toasted chips into a bowl and pour the unsweetened Almond milk over them – just like regular cereal!
  8. Slice up two strawberries and toss in for added flavor.

Keto Pancakes

INGREDIENTS

  • 2 oz cream cheese
  • 2 eggs
  • ½ tsp cinnamon
  • 1 tbsp coconut flour
  • ½-1 packet of Stevia in the Raw

INSTRUCTIONS

  1. Blend or beat together all ingredients until smooth.
  2. Heat up a non-stick pan or skillet with butter or coconut oil on medium-high temperature.
  3. Cook them just like you would normal, wheat pancakes. Cook through on one side and when ready, flip and cook the other side.
  4. Top with butter and/or a sugar-free maple syrup (check your labels to make sure the syrup you use fits within your daily keto restritions.)

Keto Frittata With Spinach

INGREDIENTS

  • 5 oz. diced bacon or chorizo
  • 2 tbsp butter, for frying
  • 8 oz. fresh spinach
  • 8 eggs
  • 1 cup heavy whipping cream
  • 5 oz. shredded cheese
  • salt and pepper

INSTRUCTIONS

  1. Preheat the oven to 350°F.
  2. Fry bacon in butter on medium-high heat until crispy. Add spinach and stir until spinach is wilted. Remove the pan from the heat and set aside.
  3. Whisk eggs and cream together then pour into a greased baking dish.
  4. Add the bacon, spinach and cheese on top and place in the oven. Bake for 25–30 minutes or until golden brown on top!

Deviled Eggs Keto-fied

INGREDIENTS

  • 4 eggs
  • 1 tsp tabasco
  • ¼ cup mayonnaise
  • 1 pinch herbal salt
  • 8 cooked and peeled shrimp or strips of smoked salmon
  • Fresh dill

INSTRUCTIONS

  1. Begin by boiling eggs by placing them in a pot and covering them with water. Place the pot over medium heat and bring to a light boil.
  2. Boil for 8-10 minutes to make sure the eggs are hardboiled.
  3. Remove the eggs from the pot and place in an ice bath for one-two minutes until cool, before peeling.
  4. Cut eggs in half and remove the yolks.
  5. Set yolks aside in a bowl. We'll use these again in a few steps.
  6. Place the egg (sans yolks) on a plate.
  7. In a bowl, mash the yolks together. Add salt and mayonnaise. You can add tabasco now, if you like a little heat!
  8. Add the yolk & mayo mixture, to the egg whites and top with a shrimp or smoked salmon on each.
  9. Finish with dill garnish on top!
